Ikan Pallumara - Pallumara Fish

Ingredients: 
- 1 lemongrass stalk 
- 1 tomato
- 3 cloves of garlic 
- 6 cloves of shallot 
- 1 turmeric
- A galangal (lengkuas) measures 5 cm
- 3 tablespoons of palm oil 
- A tamarind (asam Jawa) measures 5 cm that have soaked with hot water 
- 2 fish (according to your favorite fish, but I recommend to buy milk fish (ikan bandeng), mackerel pacific (ikan salem), and orange-spotted grouper (ikan kerapu)
- 1 teaspoon of salt 
- 1 teaspoon of sugar 
- 300 ml water
The Process of making Pallumara fish: 
- The first time, chop 3 cloves of garlic into small pieces. 
- The second tutorial, chop 6 cloves of shallot into small pieces, too. 
- Then, mash a galangal (lengkuas) measures 5 cm and one turmeric. 
- Chop one lemongrass stalk into 3 pieces and don't forget to mash 3 pieces of lemongrass. 
- Chop one tomato into small pieces. 
- Pour down 3 tablespoons of palm oil and let it stand until the oil is hot. 
- Add a few pieces of shallot and garlic to the pan. Then, stir it until a few pieces of shallot and garlic are brownish. 
- Pour down the tamarind (asam Jawa). 
- Add a few pieces of lemongrass, one galangal and turmeric which have mashed. 
- Add two orange-spotted groupers (ikan kerapu) to the pan. 
- After that, stir the mixture between spices and two fish until blended. 
- Add a few pieces of tomato. 
- Then, add 1 teaspoon of salt and sugar. 
- Stir the mixture between spices and two fish until blended. If the fish meat is rather soft, the fish is ready to be served.

Explanation: 
Pallumara fish is one of the typical foods of South Sulawesi Province. Generally, Pallumara fish are used to make Pallumara fish including milkfish (ikan bandeng), mackerel pacific (ikan salem), and orange-spotted grouper (ikan kerapu). Pallumara fish is the most delicious served with rice and sambal dabu-dabu or sambal mangga (chili).
